APPLE CREAM CAKE

* 1/2 cup chopped pecans
* 2 tsp. ground cinnamon
* 1 & 1/2 cups sugar
* 2 eggs
* 1 tsp. vanilla
* 1 tsp. baking soda
* 1 tsp. baking powder
* 1/2 tsp. salt
* 1 cup sour cream
* 1/2 cup butter
* 2 cups sifted flour
* 2 medium apples, pared and thinly sliced

Preheat oven to 375 degrees. Mix pecans, cinnamon and 1/2 cup sugar in a bowl. Cream butter; add remaining sugar gradually. Mix until light and fluffy; add vanilla and eggs, one at a time. Sift flour, baking powder, salt and soda together; beat into butter mixture alternately with sour cream. Spread half of batter in greased 9-inch tube pan with removable bottom. Top with apple slices and 1/2 cup pecan mixture. Add remaining batter; top with remaining pecan mixture. Bake for 40 minutes in 350 degree oven. Cool for 30 minutes in pan, then remove.

APPLE CRISP (President George Bush)

* 4 cups peeled and sliced Granny Smith apples
* 1/4 cup orange juice
* 1 cup sugar
* 3/4 cup all-purpose flour, sifted
* 1/2 tsp. cinnamon
* 1/4 tsp. nutmeg
* pinch salt
* 1/4 cup butter, cut up
* heavy or whipping cream (optional)

Preheat oven to 375 degrees. Butter a 9-inch glass pie plate. Arrange apples in pie plate, mounding them in center. Pour orange juice over apples.

In bowl combine sugar, flour, cinnamon, nutmeg and salt. Cut in butter until mixture resembles coarse crumbs; sprinkle over apples. Bake 45 to 55 minutes, until topping is browned and apples are tender. Serve warm with heavy cream.

APPLE DUMPLINGS (KY GOV Martha Layne Collins)

* 8 tart apples, peeled and cored
* 8 tbsp. butter
* 1/2 cup sugar
* 1/2 tbsp. cinnamon
* 1 tsp. nutmeg
* unbaked pie crust

Layer crust in bottom of a 2 quart casserole dish. Place apples on top of crust. Combine sugar, cinnamon, and nutmeg. Spoon sugar mixture in center of apples. Place 1 tablespoon butter on each apple. Place crust on top, making decorative fluted edge. Brush beaten egg on top and bake at 350 degrees for 45 minutes. May serve with cream, ice cream or sauce.

APPLE NUT CAKE

* 1 cup corn oil
* 3 eggs
* 2 cups sugar
* 1 tsp. vanilla
* 3 cups plain flour
* 1 tsp. salt 1 tsp. soda
* 1 tsp. each cloves, cinnamon, nutmeg
* 3 cups mellow apples, finely chopped
* 1 cup nuts (black walnuts) chopped

Mix oil, eggs, sugar and vanilla. Sift dry ingredients; blend with first mixture, add apples and nuts; pour into a greased, waxed paper-lined tube pan, place in a cold oven then bake at 350 degrees for 1 hour and 10 minutes. Remove from pan while still hot.

APPLE SUNRISE
Serves Six

* 2 cups orange juice
* 2 cups apple juice
* 1/2 cup chopped pineapple
* 1 cup capped strawberries
* 3 bananas

Blend all ingredients in food processor, place in freezer until almost completely frozen. Re-blend and serve.

Buttermilk Glaze

* 1/2 cup buttermilk
* 1 cup sugar
* 1/4 stick butter
* 1/2 tsp. soda
* 1 tbsp. white syrup

Boil 4 minutes. Put on cake warm.

CLARA DANIEL’S DRIED APPLE PIE

* 1 quart of dried apples (soak a minimum of 2 hours)
* add 1/2 cups of sugar (or sweetener to taste)
* 2 cups water (add 1/2 cup at a time until apples cook tender)
* add:
* * 1 tsp. ground cinnamon
* * 1 tsp. ground allspice
* mix well and pour into unbaked 9 in. pie crust (see below)

Place pie in 350 degree oven for 35 minutes or until brown.
Pie Crust

* 2 cups flour (plain)
* 1/2 cup crisco
* 1 egg
* 1 tsp. salt
* 1 tsp. vinegar
* add ice water – enough to mix dough
* Divide dough in half.
* Flour rolling pin and board.
* Roll out about 1/8 inch thick.
* Place in buttered pie pan.
* Add apple filling.
* Roll out other half of dough.
* Place on top of pie.
* Pinch all around pie shell.
* Break off excess dough.

DOLLY PARTON’S FAVORITE APPLE STACK CAKE
(Serves 10 -12)

* 6 cups self-rising flour
* 1/2 tsp. baking soda
* 1 cup butter
* 4 beaten eggs
* 1/2 cup molasses
* 1 cup sugar
* 1 tsp. vanilla
* 1 tsp. cinnamon
* 2/3 cup milk

Sift together flour and soda; add butter and mix well. Beat together eggs, molasses, sugar, vanilla, cinnamon and milk. Add flour mixture to liquid, mixing until it looks like bread dough. Turn out onto a floured board or cloth and knead for a few seconds. Divide the dough into six equal parts and roll out into thin layers like a pie crust. Grease and flour six round cake or pie pans, putting one layer into each pan and patting it flat. Bake 10 to 15 minutes in an oven preheated to 300 degrees. Remove and cool.

FROSTY APPLE SHAKE

* 1 quart apple cider (chilled)
* 1 pint vanilla ice cream (softened)
* 1 (8 & 3\4 ounce) can crushed pineapple (optional)
* 1\2 tsp. cinnamon
* nutmeg

Combine in blender or mixer the apple cider, ice cream, crushed pineapple and cinnamon; mix until frothy. Sprinkle with nutmeg.

LORETTA LYNN’S APPLE TURNOVERS

* 3 cups sifted all-purpose flour
* 3 tbsp. granulated sugar
* 1 & 1/2 tsp. salt
* 1/2 tsp. cinnamon
* 1 & 1/4 cups Crisco
* 5 to 6 tbsp. water
* 1 can (20-22 oz.) prepared apple pie filling
* confectioner’s sugar

Preheat oven to 425 degrees. Combine flour, sugar, salt and cinnamon. Cut in Crisco. Sprinkle dough with water a tablespoon at a time, until just enough has been added so dough can be patted into a ball. On a floured surface roll 1/2 of dough into a 10″ x 15″ rectangle. Cut into six 5″ squares. Repeat with other half of the dough. Place about 2 tablespoons of fruit filling in each square. Fold over one half of pastry to form triangle. Seal edges firmly with a fork. Prick top with fork. Bake on ungreased baking sheets 12 -15 minutes. Cool slightly, sprinkle with confectioner’s sugar.

WYNONNA JUDD’S APPLESAUCE CAKE

* 2/3 cup butter
* 3 & 1/2 cups flour
* 2 cups sugar
* 1/2 teaspoon salt
* 1 tbsp. baking powder
* 2 tsp. baking soda
* 2 tsp. ground cinnamon
* 1 tsp. allspice
* 1/2 tsp. ground cloves
* 1/2 cup plus 2 tbsp. cocoa
* 2 eggs
* 2 cups unsweetened applesauce
* 1 cup raisins, soaked in hot water until plump (discard water)
* 1 cup chopped walnuts

In mixing bowl, cream the butter and sugar. Add eggs, applesauce and raisins. In separate bowl, blend all dry ingredients. Add the butter-applesauce mixture. Mix well and pour into a bundt pan. Bake 1 hour at 360 degrees F.

APPLE-CHOCOLATE CHIP COOKIES

Sift together and set aside:

* 4 & 1/2 cups all-purpose flour
* 1/2 tsp. salt
* 1 tsp. cinnamon
* 1/2 tsp. ground cloves

Cream 2 sticks of butter or margarine with 2 cups of sugar until light and fluffy. Combine a teaspoon soda with a cup of applesauce and a lightly beaten egg. Mix everything together except the dry ingredients. Add the dry ingredients gradually, mixing well after each addition. Add the 6 oz. package of chocolate chips last.

Drop by teaspoonsful onto a well greased cookie sheet and bake at 350 degrees for 10 to 15 minutes.

I use the 6 oz. package of chocolate chips and a 15 oz. jar of applesauce. At Christmas I leave out the chips and add candied fruit to make a type of Christmas Rock Cookie.
